Watermelon Mint Limeade
When Kim’s recent how-to make pink lemonade inspired the idea of watermelon limeade, I thought I’d struck upon undiscovered gold. Gold indeed, I came to find that a whole slew of celebrity chefs have had the same inkling, and all offer their own version of this delicious, cooling drink. Ours adds muddled mint for extra freshness; kids love the minty sweetness, and it also provides the perfect base for a summer cocktail.
Watermelon Mint Limeade
Yield: 3 quarts, 12 (8-ounce) glasses
Cook Time: 15 minutes
Ingredients:
- 16 cups chopped seedless watermelon (about 12 pounds)
- Juice of 10 limes (about 1 1/2 cups)
- 2 cups distilled water
- 1/2 cup raw organic sugar
- 1 ounce fresh mint leaves
Directions:
- Place chopped watermelon in a blender, and puree until smooth (you may have to do this in two batches). Pour into a large pitcher or jug.
- Add lime juice, water, and sugar, and stir well until sugar is dissolved.
- To serve, strip leaves from two sprigs of mint, and muddle in the bottom of a glass. Fill with ice, and pour limeade over top.
- Store extra limeade in the refrigerator, and shake or stir between servings to redistribute pulp.
