Watermelon Limeade Popsicles
After experimenting with watermelon limeade recently, I fell deeply in love with its sweet, tangy summer flavor. I made a huge batch, much of which I poured into popsicle molds to make sure it would stick around for a while. The tartness of the lime seems to come out more in frozen form. That doesn’t scare the kiddos away, though—they nearly killed the whole batch before I even got a taste!
Watermelon Limeade Popsicles
Yield: 12 (4-ounce) popsicles
Cook Time: 15 minutes
Ingredients:
- 8 cups chopped seedless watermelon (about 6 pounds)
- Juice of 5 limes (about 3/4 cup)
- 1 cup distilled water
- 1/4 cup raw organic sugar
Directions:
- Place chopped watermelon in a blender and puree until smooth. Add lime juice, water, and sugar and stir well, until sugar is dissolved.
- Pour limeade into popsicle molds and freeze at least 4 hours.
- Rotate frozen popsicles under a stream of hot water for about 10 seconds to release from the mold. Make sure to serve with plenty of napkins!
