Tuna Kelp Scroodle

Seaweed is a tricky thing to sneak into a kiddie diet, but well worth the trouble. A great source of iodine, it’s also packed with magnesium, iron, potassium, and antioxidants. Kelp noodles blend right in with this tasty tuna salad. They’re mild in flavor with a texture just like pasta (a little crunchier when fresh) and don’t require any cooking. Look for them at natural food stores, Asian markets, or online.

Tuna Kelp Scroodle



Yield: 4 6 kid-size servings


Cook Time: 5 minutes


Ingredients:

  • 1 cup kelp noodles (about 3 ounces), chopped
  • 1 (5-ounce) can albacore tuna
  • 1 large hard-boiled egg, chopped
  • 1 dill pickle spear, chopped (can substitute 1 tablespoon pickle relish)
  • 1 small rib celery, chopped
  • 1 tablespoon mayonnaise
  • 1 tablespoon pickle juice
  • Salt, to taste

Directions:

  1. Combine all ingredients in a mixing bowl and stir well. Allow to sit for 10 minutes in the refrigerator so that noodles will soften.
  2. Serve on its own, with crackers, or on your kiddo’s favorite bread.
