Super Vital Salad
This is a simple, all-veggie salad spiked with the health-giving properties of grapeseed oil, raw apple cider vinegar, seeds, nuts, and nutritional yeast. It is bursting with flavor, and each bite nurtures the body and taste buds. It is especially restorative after an overly indulgent night.
Super Vital Salad
Yield: 1 large salad
Cook Time: 5 minutes
Ingredients:
- 2 cups chopped romaine, butter lettuce, arugula, or a blend
- 6 cherry tomatoes
- 2 radishes, thin sliced
- 1 pickling cucumber, thin sliced
- ΒΌ cup chopped walnuts
- 1 teaspoon raw sunflower seed kernels
- 1 teaspoon raw pumpkin seed kernels
- 1 teaspoon nutritional yeast
- 1 tablespoon grapeseed oil
- 2 tablespoons raw, unfiltered apple cider vinegar
- Salt and pepper, to taste
Directions:
- Wash and dry lettuce thoroughly. Place in a roomy bowl (like a soup bowl), and arrange tomatoes, radishes, and cucumber over top. Sprinkle with nuts, seeds, and nutritional yeast.
- Drizzle evenly with oil and vinegar, and season with salt and pepper to taste. Eat and enjoy immediately.
