Sun-Dried Tomato Artichoke Dip

This tasty artichoke dip is a great addition to a picnic or poolside get-together. The earthy sweetness of sun-dried tomatoes and tangy crispness of marinated artichoke hearts make a great pair. It only takes a few minutes to throw together and keeps well in the fridge. As always, try mixing it up with your favorite herbs or seasonings.

Sun-Dried Tomato Artichoke Dip



Yield: About 1 1/2 cups, or an appetizer for 4


Cook Time: 5 minutes


Ingredients:

  • 1/2 cup packed sun-dried tomatoes (about 15)
  • 1/2 cup marinated artichoke hearts (plus about 1 tablespoon of their liquid)
  • 4 ounces organic cream cheese
  • 1/2 teaspoon sea salt

Directions:

  1. Combine all ingredients in a blender or food processor and puree until smooth. Adjust the portions of each ingredient to suit your taste.
  2. Serve with chips or use as a spread on wraps or sandwiches.
