Simply Sautéed Lettuce & Caramelized Red Onion

It isn’t often you see a dish with cooked lettuce, but once you do, it alters your entire perception of it. This is a simple, tasty way to get acquainted with lettuce outside the salad bowl, cooked down with caramelized red onions and a little salt and pepper.

Yield: 2 side servings


Cook Time: 20 minutes


Ingredients:

  • 3 ounces lettuce of choice (green leaf and arugula are good options)
  • 1 tablespoon extra virgin olive oil
  • 1 small red onion, sliced
  • 1 clove garlic, minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

Directions:

  1. Wash lettuce and shake dry, leaving it partially wet. Roughly chop.
  2. Heat oil in a skillet over medium high heat. Once you begin to see small wisps of smoke, add onion, and stir to coat. Cook until very brown and caramelized, stirring occasionally about 15 minutes. Add garlic after about 10 minutes.
  3. Add chopped lettuce to the pan, and stir to combine. Cook until very soft and wilted about 5 minutes. Season with salt and pepper, and serve warm.
