Red Radish Slaw
This cool, crunchy, naturally peppery slaw makes a great topping for fish tacos. It’s also a great side to a rich, meaty main course and a nice break from the creamy cabbage classic.
Red Radish Slaw
Yield: About 3 cups
Cook Time: 15 minutes, including prep
Ingredients:
- 1 bunch radishes (about 6 large), cut into thin matchsticks
- 1/2 small red onion, thinly sliced and cut in half to match the size of the radish
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Directions:
- Combine all ingredients in a medium mixing bowl and stir well to combine.
- Slaw will turn more and more red (or, more accurately, a bright magenta) the longer it sits.
