Prickly Pear Fruit Smoothie
Prickly pear fruit can appear intimidating, but it is sweet, delicious, and full of nutrients. This smoothie is made with ripe mango and well-hidden parsley, offering a tasty, colorful and healthful snack your little one will love. It can also be frozen into popsicle molds.
Prickly Pear Fruit Smoothie
Yield: 24 ounces, 6 (4-ounce) smoothies
Cook Time: 15 minutes
Ingredients:
- 5 fresh prickly pear fruit, cleaned and chopped
- 1 large ripe mango, chopped
- ¼ cup fresh parsley leaves
- ½ cup 100 percent fruit juice of choice
- 4 ice cubes
Directions:
- Place chopped prickly pear in a blender, and add a splash of fruit juice. Puree until smooth, adding more juice as needed. Strain puree through a wire sieve, and discard seeds.
- Return strained puree to the blender, and add mango, parsley, juice, and ice cubes. Blend for several minutes until parsley is nearly invisible and ice cubes are crushed. Pulse as needed to break up large pieces.
- Pour smoothie into glasses, and serve cold. Alternatively, pour into 4-ounce popsicle molds, and freeze for at least 4 hours.
