Peach Potato Salad

Ingredients:

  • 6 red potatoes
  • 2 large peaches, pitted and cut into large cubes
  • 2 ribs celery, chopped
  • 1/4 cup packed fresh cilantro leaves, chopped
  • 1/4 cup balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

Directions:

  1. Cover potatoes with water in a saucepan and bring to a boil. Cook until a fork easily pierces through, about 10 minutes. Drain and allow to cool.
  2. Once cool enough to handle, cut potatoes into large cubes. Combine in a medium mixing bowl with peaches, celery, and cilantro; gently mix together. Drizzle vinegar and oil over top and sprinkle with salt and pepper. Toss to mix well.
  3. Chill before serving.
