Peach Potato Salad
A sweet-and-savory departure from traditional mayonnaise or mustard potato salad, this simple mix of red potatoes, fresh peaches, celery, cilantro, and a balsamic dressing combines an array of distinct flavors into one tasty summertime dish.
Peach Potato Salad

Ingredients:
- 6 red potatoes
- 2 large peaches, pitted and cut into large cubes
- 2 ribs celery, chopped
- 1/4 cup packed fresh cilantro leaves, chopped
- 1/4 cup balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
Directions:
- Cover potatoes with water in a saucepan and bring to a boil. Cook until a fork easily pierces through, about 10 minutes. Drain and allow to cool.
- Once cool enough to handle, cut potatoes into large cubes. Combine in a medium mixing bowl with peaches, celery, and cilantro; gently mix together. Drizzle vinegar and oil over top and sprinkle with salt and pepper. Toss to mix well.
- Chill before serving.
