Peach Cucumber Popsicles With Lemongrass

Yield: 14 (4-ounce) popsicles or 56 (1-ounce) ice cube pops

Cook Time: 15 minutes, plus time to freeze

Ingredients:

  • 1 cup water
  • 1/2 ounce dried organic lemongrass
  • 1/2 cup organic raw sugar
  • 1 large organic cucumber, chopped (about 6 cups)
  • 6 large organic peaches, pitted and chopped (4 cups)

Directions:

  1. Bring water to a boil. Wait 10 seconds, then pour over dried lemongrass and stir in sugar until completely dissolved. Allow to steep for 5 minutes. Strain.
  2. Combine cucumber, peaches, and lemongrass syrup in a blender and puree until smooth. Pour into molds and freeze for 4 hours or more.
  3. Run frozen molds under hot water for a few seconds to loosen before eating.
  4. If making ice cube pops, allow to freeze for an hour or two before inserting sticks or skewer pieces, so that they’ll stay upright.
  5. For prettier popsicles, set aside chunks of fruit and minced, rehydrated lemongrass and drop into the molds at random intervals.
