Peach Cucumber Popsicles With Lemongrass
Peach and cucumber make a refreshing, juicy, nutritious popsicle combination. The addition of a quick lemongrass syrup lends a sweet, citrusy kick along with antioxidants, anti-microbials, folic acid, and essential vitamins.
Peach Cucumber Popsicles With Lemongrass
Yield: 14 (4-ounce) popsicles or 56 (1-ounce) ice cube pops
Cook Time: 15 minutes, plus time to freeze
Ingredients:
- 1 cup water
- 1/2 ounce dried organic lemongrass
- 1/2 cup organic raw sugar
- 1 large organic cucumber, chopped (about 6 cups)
- 6 large organic peaches, pitted and chopped (4 cups)
Directions:
- Bring water to a boil. Wait 10 seconds, then pour over dried lemongrass and stir in sugar until completely dissolved. Allow to steep for 5 minutes. Strain.
- Combine cucumber, peaches, and lemongrass syrup in a blender and puree until smooth. Pour into molds and freeze for 4 hours or more.
- Run frozen molds under hot water for a few seconds to loosen before eating.
- If making ice cube pops, allow to freeze for an hour or two before inserting sticks or skewer pieces, so that they’ll stay upright.
- For prettier popsicles, set aside chunks of fruit and minced, rehydrated lemongrass and drop into the molds at random intervals.
