Kohlrabi Leek Soup
Kohlrabi is a lesser-known cruciferous veggie with delicious greens and a delicate flavor, somewhere between cauliflower and turnip. This soup uses the bulb and the greens with leek, garlic and onion in a simple broth. It makes a great side dish or hangover recovery meal. If you can’t find kohlrabi with the greens on, try substituting about 2 cups of another hearty chopped green like kale or collards.
