Heavenly S’mores Pie

We’re focusing on cleansing this week, but let’s be honest, we can’t drag everyone along for the ride. This S’mores pie is a great way to quench the sweet tooth of your kiddos or housemates, and easy enough to make them whip it up themselves.

Heavenly S’mores Pie


Adapted from the Taste of Home Kid-Approved Cookbook, Reiman Media 2011


Yield: One (7-inch) pie, about 8 servings


Cook Time: 15 minutes, plus time to freeze


Ingredients:

  • 5 graham crackers (enough for 1 cup of crushed crumbs)
  • 2 tablespoons sugar
  • 4 tablespoons butter, melted (1/4 cup)
  • 6 scoops chocolate ice cream, softened (about 3 cups)
  • 1 cup mini marshmallows
  • Chocolate syrup for garnish*

* Most chocolate syrups are made from high fructose corn syrup. Read labels and look for an organic brand for best taste and quality.

Directions:

  1. Preheat oven to 325˚F. Crush graham crackers to fine crumbs in a baggie. Stir together with sugar in a medium bowl and combine with melted butter. Press onto the bottom and sides of a greased 7-inch pie plate or baking dish.
  2. Bake crust until crisp and golden brown, about 8 minutes. Cool completely.
  3. Scoop ice cream into baked pie crust and use a rubber spatula to smooth it into an even filling. Cover with marshmallows and freeze for 4 hours to overnight.
  4. When ready to serve, move an oven rack to 6 inches from the top; preheat up the broiler. Place pie on the rack until marshmallows are lightly toasted, about 2 minutes.
  5. Drizzle with chocolate syrup and enjoy.
