Garden Grilled Cheese

This loaded grilled cheese sandwich is full of fresh veggies, turning a comfort classic into a colorful, nutritious meal. It goes great alongside a cup of hot soup and can be customized to include your favorite vegetables.

Garden Grilled Cheese

Cook Time: 10 minutes


Ingredients:

  • 2 slices bread of choice
  • 1 teaspoon olive oil
  • 1 thick slice Provolone cheese
  • 2 slices fresh tomato, chopped
  • ½ small green bell pepper, chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon dried oregano

Directions:

  1. Heat a skillet over medium high heat. Drizzle bread with olive oil. Once hot, place both slices in the skillet to toast.
  2. After about 30 seconds, flip both pieces of bread and turn heat down to medium. Carefully lay cheese over one piece, then top with chopped tomato and peppers. Sprinkle with salt, pepper, and oregano, then place the other piece over top, toasted side down.
  3. Press sandwich down with a spatula and allow to cook about 5 minutes, until cheese is beginning to melt. Flip sandwich and toast the other side about an additional 5 minutes.
  4. Remove from heat, cut in half, and serve with chips or a hot bowl of soup.
