Fresh Purple Peas Al Dente With Orange & Thyme

Fresh purple hull peas are such a treat that I decided to do this batch al dente, preserving some of their natural body. Red onion and cherry tomatoes give a burst of color, and orange rind and fresh thyme accentuate the fresh and crisp notes.

Fresh Purple Peas Al Dente with Orange & Thyme



Yield: 2 side servings


Cook Time: 15 minutes


Ingredients:

  • 1 tablespoon olive oil
  • ½ small red onion, roughly chopped
  • ½ pound fresh purple hull peas
  • ¼ cup cherry tomatoes, halved (about 15)
  • ½ teaspoon sea salt
  • 1 teaspoon orange zest
  • 1 teaspoon fresh thyme leaves (3 to 4 sprigs)

Directions:

  1. Heat olive oil in a skillet over medium heat. Cook onion until softened, about 5 minutes. Add peas and tomatoes, and toss to combine. Cook another 5 minutes, stirring frequently. Wet your hands, shake them off into the pan and immediately cover, allowing peas to steam slightly for another 5 minutes.
  2. Stir in salt, zest, and thyme, and remove from heat. Serve warm as a side dish. Or spoon into fresh lettuce leaves, and roll up into wraps as pictured.
