Easy Strawberry Banana Pops

A great alternative to sugary Popsicles, these ice cube pops are naturally delicious and 100% fruit. They’re easy enough to make with your little one(s) and wide open for adaptation with your favorite fruit or juice.

Easy Strawberry Banana Pops



Yield: 16 ice cube-sized pops


Cook Time: 10 minutes, plus time to freeze


Ingredients:

  • 1 large, ripe banana, peeled (about 3 ounces)
  • 4 large strawberries, stemmed and diced (about 5 ounces)
  • 1/4 to 1/2 cup 100% apple juice

Directions:

  1. Cut ends off of banana. To make rectangular pieces that fit neatly into each ice cube mold (as pictured on the bottom of the pop), cut into 3 or 4 mostly straight segments. Trim the rounded edges from each side of the banana pieces, making them rectangular. For circular slices (as pictured on the top of the pop), skip this step. Slice banana into 1/8-inch pieces.
  2. Place a slice of banana into the bottom of each compartment of an ice cube tray. Top with diced strawberry, then with another banana slice. Trim pieces to fill in gaps as desired.
  3. Push a toothpick, small Popsicle stick or trimmed skewer in through the middle of each top banana slice. Carefully pour juice into each cube just until remaining space is filled.
  4. Place tray flat in freezer and allow to freeze completely, 12 hours or overnight. Twist tray to release frozen pops. Serve with plenty of napkins and prepare for sticky hands.
