Chia Seed Half & Half
By far my favorite drink at the soda fountain or convenience store, half and half (also known as an “Arnold Palmer”) is a perfect mix of iced tea and lemonade. This recipe makes a big batch of each and adds a teaspoon of chia seeds to the glass, which offer great fiber and protein and a bubble tea-like texture.
Chia Seed Half & Half
Yield: 8 (8-ounce) glasses
Cook Time: 45 minutes
Ingredients:
- 6 to 8 bags tea of choice
- 7 cups water, divided
- Juice of 2 to 3 lemons (about ¼ cup)
- ¼ cup raw sugar, or more to taste
- 2 to 3 tablespoons raw chia seeds, divided
Directions:
- Boil 4 cups of water, and remove from heat. Wait 10 seconds, then pour over tea bags in a pot or pitcher, and allow to steep for several minutes.
- Meanwhile, make the lemonade. Combine lemon juice with 1 cup of water and sugar, stirring to dissolve. Refrigerate.
- Add remaining 2 cups water to tea, and fill with 1 to 2 dozen ice cubes. Remove tea bag, and refrigerate.
- Once tea has cooled completely, pour a teaspoon of chia seeds into the bottom of a glass. Fill glass with ice, and pour about ¾ cup (6 ounces) of tea. Top off with about ¼ cup (2 ounces) of lemonade, and stir well. Repeat as desired.
- Let drinks chill in the refrigerator for about 15 minutes to allow chia seeds to hydrate before enjoying. They have a tendency to sink and to clump (as pictured), so stir and swirl your glass as you drink to keep them distributed.
