Carrot Spritzer ‘Cocktail’

Kids get the biggest kick out of fancy drinks—that plain ol' cup of milk or juice just seems so dull compared to the sparkling, colorful, umbrella-bearing libations us adults get to sip on all the time. This kiddie “cocktail” is as exciting as it is healthful—the sweetness and bright color come from fresh carrots, blended with a little orange and pineapple to hide the hint of veggie flavor. It’s a great soda substitute.

Carrot Spritzer 'Cocktail'



Yield: 3 (1-cup) “cocktails”


Cook Time: 5 minutes


Ingredients:

  • 1 bunch organic carrots (about 8 or 9), washed
  • 1 cup fresh pineapple, chopped
  • 1 orange
  • 1 lime
  • 12 ounces sparkling water
  • Ice, as needed

Directions:

  1. Juice carrots, pineapple, and orange and combine. Don’t have a juicer? Don’t fret—check out this post for an alternative juicing method.
  2. Cut lime into quarters, reserving a thin slice to garnish each cup.
  3. To make a cocktail, pour 1/2 cup juice into an ice-filled glass; add 4 ounces of sparkling water. Squeeze in a quarter of lime and stir.
  4. Cut a small slit in a lime slice and slide it onto the edge of the cup. You can also use a drink umbrella, small skewer of fresh fruit or other garnish to fancy it up.
  5. This “cocktail” is a great companion to a crazy straw.
