Cajun Grilled Chicken
Looking for a way to spice up your regular ‘ole grilled chicken? Let it sit in this easy Cajun marinade for at least an hour before you light up—the flavor is fantastic, and works great on its own or atop a toasted sandwich or bed of spaghetti. You can even shred leftovers into tacos, enchiladas, or chicken salad.
Cajun Grilled Chicken
Yield: 4 servings
Cook Time: 30 minutes, plus time to marinate
Ingredients:
- 4 boneless skinless chicken breasts (butterflied if more than 1-inch thick)
- 2 tablespoons olive oil
- 1 ½ teaspoons paprika
- ½ teaspoon cayenne
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon oregano
- 1 teaspoon salt
Directions:
- Prepare the grill. Light charcoal, ignite propane, etc.
- Rinse chicken breasts in cold water and pat dry. Place on a plate or in a shallow dish. Drizzle evenly with olive oil and use your hands to rub it over all sides, until chicken is well-coated.
- Combine spices and stir together until well-combined. Sprinkle evenly over chicken breasts, using your hands to cover all sides. Cover, refrigerate, and allow to marinate for at least one hour.
- If using gas, reduce heat to medium. Grill chicken until completely opaque and firm to the touch, about 6 minutes per side. The center should show no pinkness and the internal temperature should be 170 degrees Fahrenheit. Remove to a clean plate and allow to cool slightly before serving.
