Interestingly enough, the Beefeater distillery only operates Monday through Friday, and the gin made is blended together in vats to assure a consistent flavor profile. Beefeater also maintains a large juniper safe at the distillery, with approximately a two-year supply of juniper berries set aside to assure a supply for distilling in the event of bad weather or some other event destroying a juniper crop.
